The Food Protection Program of the Arkansas Department of Health inspects all food establishments in the state to ensure they follow ADH food establishment rules and regulations. The following inspections were completed recently:

Sept. 9

Dora Express East, 1335 E. College – Observed raw shell eggs being stored above ready to eat (RTE) foods inside the 2 door Atosa cooler. Store food according to its internal cooking temperature, with RTE foods stored above raw shell eggs. Relocate raw shell eggs below RTE foods.

Observed time/temperature control for safety (TCS) foods inside the sliding door cooler as well as the prep cooler with internal temperatures greater than 41. TCS foods discarded. Repair/replace sliding door cooler and prep cooler.

Observed multiple foods throughout the facility with no date labels. Food prepared and held for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold or discarded for a maximum of 7 days. Place date labels on all food held greater than 24 hours.

Observed multiple containers of rice, with time as the public health control, with no label to indicate when the rice was removed from temperature control. Corrected on site; manager labeled rice containers with the correct time.

Observed cutting board with major discoloration. Equipment, food, contact surfaces and utensils shall be clean to sight and touch. Replace cutting board.

Observed a bottle of Windex sitting next to box of single use cutlery. Toxic substances shall be kept separate from food, equipment, utensils, linens, and single use items. Relocate Windex bottle to chemical storage area.

Sept. 14

Southside High School, 70 Scott Drive – Observed milk in the main milk cooler with an internal temperature greater than 41. Main milk cooler was moved to storage area; secondary milk cooler was moved to serving line. Repair/replace main milk cooler.

Observed soiled ladles being stored with clean utensils, and cutting board with dark discoloration. Equipment, food, contact surfaces and utensils shall be clean to sight and touch. Clean and sanitize ladles and cutting board.

Observed food debris inside the kitchen hand washing sink. Corrected on site; employee cleaned and sanitized hand washing sink.

Observed chemical spray bottle inside the mechanical ware wash room with no label. Working containers used for storing poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material. Label chemical spray bottle.

Observed chemical spray bottles being stored directly above hamburger buns at the grab & go station. Corrected on site; employee discarded hamburger buns. Discontinue storing food below chemical spray bottles.

Observed quat sanitizer in sanitizer bucket to register greater than 400ppm. Corrected on site; manager remade sanitizer and it now registers at 400ppm.

Southside Preschool, 70 Scott Drive – Observed dark discoloration on two cutting boards. Corrected on site; person in charge discarded cutting boards.

Did not observe hand washing signage at the hand washing sink. Corrected on site; hand washing signage was provided to person in charge.

Southside Middle School, 70 Scott Drive – Observed large opened container of lemon juice with a label that states “refrigerate after opening.” Corrected on site; manager discarded lemon juice.

Observed soiled knife and soiled cutting boards sitting with clean wares. Corrected on site; manager cleaned and sanitized knife and cutting boards.

Observed multiple chemicals stored above single use items on shelf by rest room. Corrected on site; all chemicals were relocated below single use items.

Observed quat sanitizer at 3 compartment sink to register greater than 400ppm. Corrected on site; education was given to manager on how to dilute sanitizer to 400ppm.

Sept. 17

Stars Academy, 200 General St. – Observed opened package of bologna with no date label. Manager stated it was opened yesterday. Corrected on site; manager discarded bologna.
